Chilli Con Carne

​Ingredients:

500g lean mince beef
1 white onion and 1 red onion
1 pepper (any colour)
1 chilli
1 courgette
1/2 large sweet potato
1 can of kidney beans
1 can of chopped tomatoes
3 cloves of garlic
5 tbsp tomato puree
salt and pepper

Preparation Time: 10 minutes

Cooking Time: 1 hour*

*The longer you let it sit and simmer away, the more flavour your chilli con carne will have.
Method:
1. Prepare your vegetables by finely slicing your onions and chilli and cutting the pepper, courgette and sweet potato into cubes.
2. Fry off your mince in a deep pan with cooking spray/oil and once the meat has browned, add the onions and chilli to the pan, cooking off for 3-4 minutes until the onions have softened.
3. Add the cubed vegetables into the pot and fry off until they have softened a little before stirring in the tomatoes, puree, garlic and beans.
4. Reduce the heat and cover the pan with a lid. Stir occasionally and the chilli con carne will be ready to serve when the vegetables have all softened and the sauce has thickened.
5. Serve on its own or with rice.

Additional Notes:

This chilli can be chilled and then reheated to be enjoyed the following day
