You will need: 
  • ​​6 rashers of bacon (fat removed)
  • 5 eggs
  • A handful of mushrooms, finely sliced
  • Optional 1/4 pepper, finely chopped
  • Salt and Pepper
  • Frylight

Syn Value: 0

Method:

  1. Preheat the oven to gas mark 5 or 180°C.
  2. ​Frylight a deep muffin tin and line with the bacon.
  3. Whisk the eggs with the salt and pepper and then pour into each bacon 'cup'.
  4. Share the finely sliced mushrooms and peppers between the cups and then fold the bacon over the top.
  5. Place in the oven for 20 minutes or until the eggs have risen to 1/3 over the top of the tin, remove and cool.

These muffins can be stored in an airtight container in the fridge and should be eaten within  three days.
